PALMYRA COCKTAIL/MOCKTAIL

Let the tangy, spiced notes of a Palmyra cocktail transport you to an island where pineapple and citrus grow within the shade of gently swaying palms. Perfect for serving at your book club discussion of Palmyra.

COCKTAIL VERSION

Ingredients:

· 3 oz (90 ml) Prosecco

· ½ oz (15 ml) spiced rum

. 3 oz (90 ml) unsweetened pineapple juice

· ½ oz (15 ml) lime juice

· Fresh pineapple wedges

· Thinly sliced lime/lemon

· Sliced jalapeño (optional)

· A red fruit for garnish

· Ice cubes


Instructions:

1. Add prosecco, rum and juices to a glass of choice.

2. Add a slice of lime, lemon and a couple of pineapple wedges.

3. Add a red garnish for colour, e.g. a maraschino cherry, a couple of cranberries, sliced strawberry, dry
sorrel etc.

4. If you like an extra zing, add a slice of jalapeño or other mild flavourful pepper, such as pimento.

5. Add ice and stir to create foam.

6. Serve and enjoy the taste of paradise with every sip.

For larger servings, add a 750ml bottle of prosecco to an equal amount of pineapple juice, 120 ml of spiced rum and 120 ml of lime juice for approx 6 servings.

Lime juice can be sourced from frozen concentrate or 60 ml of simple syrup and 60 ml of fresh squeezed lime. Simple syrup is equal parts sugar and water, 30 ml each, heated to dissolve the sugar, then cooled.

Can add more pineapple juice if too tart.



MOCKTAIL VERSION

Ingredients:

· 4 oz (120 ml) unsweetened pineapple juice

· 1 oz (15 ml) lime juice

· 2 oz Soda water or to taste

· Fresh pineapple wedges

· Thinly sliced lime/lemon

· Sliced jalapeño (optional)

· A red fruit of choice for garnish (optional)

· Ice cubes

· A dash of Angostura Bitters



Instructions:

1. Add the juices and soda water to a glass of choice.

2. Add a slice of lime, lemon, and a couple of pineapple wedges.

3. Add a red garnish for colour e.g. a maraschino cherry, a couple of cranberries, sliced strawberry, dry
sorrel etc.

4. If you like an extra zing, add a slice of jalapeño or other mild flavourful pepper, such as pimento.

5. Add ice, followed by a dash of Angostura Aromatic Bitters and stir.

6. Serve and enjoy the taste of paradise with every sip.

7. For larger servings, add a 1L box of juice to 0.5 L of soda water and 120 ml of lime juice for approx 6
servings.
